Simple Chicken Salad Recipe
Being the HUGE chicken salad connoisseur that I am, (ok I may be pushing it), I decided to just make my own damn chicken salad. I eat it quite often for lunch— more than I’d care to admit, and the price starts to add up so I thought it would be more money savvy to do it myself.
I’m a simple gal when it comes chicken salad; no grapes, no nuts, no raisins, or whatever else there is. Rotisserie chicken was my friend for this recipe. I didn’t want to spend too much time in the kitchen so did I buy this chicken ready-to-eat? Yes, Yes. I. Did! Mayonnaise, celery, red onion, lemon juice, as well as salt and pepper, are also included into this dish.
Ingredients
- 3 Cups boneless skinless chicken (shredded)
- 3/4 Cups mayonnaise
- 2 TBSP mustard
- 1.5 stalks of celery
- Red onion chopped to preference
- 2 TBSP lemon juice
- 1/2 TSP salt
- Dash garlic salt
- Pepper to taste
I’m not a huge fan of whole wheat bread but I feel as though it’s a pretty good bread that this filling needed, especially when toasted… it’s also the only bread I had at the moment but let’s not get into that :). I also used jalepeno potato chips as the side.
